ALMOST FAMOUS BROWNIES

This is a true story. Long ago, and not so far away my oldest ran cross country for his high school, Lake Braddock. For four years I would bake trays of brownies to take to the Saturday meets to share with the team after they had run, rested and cooled down. Something to look forward to and I really enjoyed baking these brownies for them. One of the star athletes on the team continued on to run for William and Mary, a prestigious school in our state. A few years later, she was interview by the Washington Post about her dazzling running career. She reflected on her running journey and reminisced about the good that had come from it. Of many fond memories, one was she loved those brownies after the Saturday meets. Well, there you have it! One line of ink in the Washington Post! Of course, no names given, but we all knew where they came from. Sort of famous, even for a moment.


So bake these brownies and create some new memories of your own. You never know who remembers the little things that you do. Perhaps your brownies will become famous too!

This is what you will need-
1 C. Soft Butter
2 C. Chocolate Chips
1 ½ C. Sugar
2 Tsp. Vanilla
4 Eggs (room temperature)
½ C. Flour
1 Tsp. Baking Powder
½ C. Cocoa Powder

Preheat oven to 350 degrees F.


Line a 9" x 14" pan with parchment paper. Make sure the paper extends over two edges as shown.




Microwave the chocolate chips in a safe container stirring after 20 seconds intervals until the chips start to lose their shape.




Stir in the butter and mix until the butter is completely incorporated in the chocolate.


Transfer to a large mixing bowl.

 

Stir in the sugar and vanilla.



Add the eggs and mix.

 

Add baking powder to the flour and add to the mix.

 


Stir in the coca powder and mix until the batter is smooth and silky.



Transfer mix to the prepped pan and spread as evenly as possible.


Bake for 30-35 minutes or until inserted toothpick comes out fairly clean.


Let cool, remove from pan by lifting edges of the parchment and cut.


Sorta famous, even for a moment...
