Sugar and spice and everything nice is one way to describe fall. Everyone loves
fall. It's a very popular season. Fall is about raking leaves, crisp temperatures, tailgate parties, vibrant
yellows golds and reds, the wonderful smell of an outdoor fire, sweater weather. And with those sweaters you need a sweet little treat that
will warm your heart and have you daydreaming of an early autumn...the Pumpkin Spice Cookie. Fall
summed up in a cookie. Perfect with a steaming cup of cider or tucked into the lunch box of someone special for a pinch of love. A most welcome to cooler weather and kick start your fall.
Pumpkin Spice Cookie
Pumpkin Spice Cookie
This is what you will need-
1 Cup Butter
1 Cup Sugar
1 Tsp. Vanilla
2 Tsp. Cinnamon
2 Tsp. Pumpkin Spice
1 Tsp. Nutmeg
1 Egg
2 ½ Cups Flour
Place soft butter in blender.
Add Sugar and blend.
Blend in vanilla.
Add flour little by little and mix well.
Form two or three balls. Place inside zip lock bags
and seal. Flatten ball with palm of your hand. Refrigerate overnight.
Prep surface with butter and dust with flour.
Cut with a 2 ½” circular cookie cutter. I have this set of
graduated biscuit cutters that I thought would make a fun little edge, to purchase...Link here. Any shape
cutter will work beautify.
Frosting-
1 Cup Butter
4 Cups Powdered Sugar
2 Tsp. Vanilla
1 Tsp. Pumpkin Spice
1 Tsp. Nutmeg
3 Tsp. Cream
Place butter in a stand mixer. Blend until soft.
Add Vanilla.
Mix in Pumpkin Spice and Nutmeg.
Blend sugar little at a time.
Add cream and blend.
Place a tea towel over the mixer and whip frosting on high
for two minutes.
Prep a large pastry bag with an open star tip.
On the flat side of the cookie, add a star to the center of
one half of the cookies.
Pipe around the star.
Add the flat side of a cookie to the top of the cookie to
complete.
And just like that it is fall, just add spice...
