PUMPKIN SPICE DONUTS

Anything pumpkin spice is yum. So with littler cooler mornings, there is nothing more delightful then a donut with your morning coffee. And be that a pumpkin spice donut. Now that the mornings here in Virginia (or perhaps where you are) are just starting to feel a little like autumn, a PSD (Pumpkin Spice Donut) is the perfect way to greet fall. While your coffee is brewing you have just enough time to bake a dozen of these soon to be your new fall favorites. These fantastic treats have a look and taste of part muffin, part donut, part pastry. So many good things all rolled into one. YUM. And not to mention the aroma of baking donuts in your home. Heavenly.


Here are two ways to coat your fresh donuts, they are pretty and sweet. Both are wonderful, you choose. So pour yourself an extra tall coffee and enjoy a  PSD or two. Welcome Autumn, love!

Donut-

1 3/4 C. Flour
2 Tsp. Baking Powder
1/2 Tsp. Salt
2 Tsp. Pumpkin Pie Spice
1 Tsp. Cinnamon
1/3 C. Vegetable Oil
1/2 C. Brown Sugar
1 Egg
2 Tsp. Vanilla Extract
1/3 C. Pumpkin (Canned)
1/2 C. Milk

Turn oven to 350 degrees.



In a small bowl, combine flour, baking powder, salt, pumpkin pie spice and cinnamon.



In a second bowl. combine vegetable oil, brown sugar, egg, vanilla, pumpkin and milk. Blend together with a hand mixer.



Add flour to the pumpkin mix and blend together.


Spray pans with vegetable spray.

Fill a large pastry bag with the donut mix. You do not need a tip on the end of the bag.



Pipe dough into all the donut wells.



Bake for about 8 minutes, or until an inserted tooth pick comes out clean.



After a few minutes, remove from pan and let cool on baking racks.

Glaze-

1 C. Confectioners Sugar
1-2 Tsp. Cream
1 Tsp. Vanilla
2 Tsp. Melted Butter

Combine all together, adding one teaspoon of cream at a time. When glaze is runny like paint, it is ready.

Dusting Sugar Sprinkle-

1 Tbsp. White Decorative Sugar.
1 Tsp. Cinnamon
1/2 Tsp. Nutmeg





Fill a plastic frosting/icing decorating squeeze bottle and drizzle donuts. Dust with sugar sprinkle.

Or...

Cinnamon Sugar Coating-

1/2 C. Butter
1/2 C. Sugar
1 Tsp. Cinnamon

Melt butter, pour into a small dish.


Mix sugar and cinnamon together and pour into a small brown paper bag.


Dip one donut in melted butter, make sure the entire donut is covered on all sides.





Toss donut into brown paper bag, close top and gently shake donut in cinnamon sugar. Remove and repeat for each dognut.


Breakfast in bed couldn't be sweeter. Its getting chilly outside, so snuggle in...
